We are a first-generation family business!
The backbone of our cuisine is nature - wild & cultivated.
We cherish traditions and strive to renew them.
We are ambitious and meticulous, but we also want to be playful and always explore new things. Our cuisine draws inspiration from the Westphalia region, Brittany, and Réunion Island, but we are inspired by the whole world.
We follow the rhythm of the years and the cycle of the seasons. During the growing season, we work intensively with the changing offerings of nature and gather as much as possible.
We preserve the natural ingredients so that we can enjoy a little piece of nature on our plates all year round.
We are constantly studying and developing our base of ingredients and techniques.
We work closely with our suppliers to achieve this.
